Cheese is GOOD !

Raw cheese is simply cheese made of raw milk. Raw milk is a milk that comes straight from a cow, so there is no heat treatment conducted on the milk. There are lots of fear instilled in to us about the consumption of raw milk and raw cheese currently but we should remember that pasteurisation was invented In 1862 and that before that all cheese was made of raw milk. So what happened before 1862? Well, our ancestors consumed only raw milk and raw cheese!

Why is raw cheese healthier ?

Simply, due to heat treatment of milk called pasteurisation all bacteria and enzymes are being destroyed.  Its not the artisan flavour only that attracts foodies but also high level of natural probiotics.

Cheese is high in calcium, fat, and protein. It contains high amounts of vitamins A, B, K2, zinc, phosphorus, magnesium. It also contains omega-3 fatty acids and vitamin C (if it’s made of raw milk). In addition, raw cheese is high in probiotics and enzymes crucial to our immune system and healthy gut!

As one of the pre-digested foods helps us to access all vitamins and minerals.

Lactose intolerant ? No problem. Raw cheese is fermented and there is no lactose in it  as the bacteria consumes the lactose during fermentation.

Still concerned about how safe raw cheese is?

Sally Fallon Morell, president of the Weston A. Price Foundation and a cheesemaker herself said “The scientific studies show that the diverse community of microorganisms in raw milk cheese effectively limits the growth of pathogenic organisms, and thus post-process contamination is actually a greater risk in cheeses made from pasteurized milk.”

 But hey guys, Its all up to you. Raw or not raw… cheese its good!

Tips: Try raw cheese with cranberry jam, honey or grapes. I personally love the addition of salted butter on almond flour crackers or sourdough bread.
